Chupe de Camarones

Being the pride and joy of every Arequipeño, Chupe de Camarones is a popular soup not only in the Arequipa region in southern Peru but also along the central and southern Perruvian coast.

Main ingredients of this spicy shrimp chowder include of course fresh shrimps, fish stock, papas amarillas, aji panca, onions, garlic, egg, milk and cheese. Often choclo, rice, beans or peas and carrots are added.

Huacatay gives the soup its distinctive flavor.
